Beyond the flavor
The coffee from the State of Mexico has enormous potential. The farms have an average elevation of 1,900 masl (6,234 fasl). Considering a latitude of around 19°, the coffee trees grow in an optimal microclimate with extremely fertile soil. The farms look like gardens with extensions between 1 and 5 ha. Coffee is scarce and rarely gets outside the country. This lot is all about terroir, not a fancy variety or a sophisticated process.
